Sausages with squid, cabbage and mint salad

Brown Brothers chef Douglas Elder shared a couple of recipes with me, which I have simplified so they can be produced easily at home. Not really a fan of chorizo, I found Salumeria Fontana’s spicy Sicilian sausages were perfect with this warm salad.

Salted butter, preferably Happy Valley Dairies butter

Cuisine Artisan hotdog recipe

This is based on a delicious pizza I ate at Pizza East in Shoreditch, London. If you don't want the heat of the chilli oil, you can simply serve the pizzas with the oil you cooked the garlic in.

Toulouse sausage with white bean peperonata

The spiral looks great, but needs a little extra cooking time. I find that brushing it with the browned oils it releases in the pan helps achieve a good overall colour.

Steamed Rock Oysters and Grilled Sweet Fennel Sausage with Wilted Spinach


  • 8 Salumeria Fontana sweet fennel sausages or your favourite sort

  • 2 handfuls spinach

  • 12 fresh oysters, shucked but left in ½ shell

  • 1 tbsp extra virgin olive oil

  • 8 slices thin pancetta
